NCL (This was in 1985. I think they're just called Norwegian now), Carnival and Royal Caribbean.
Honestly? Put me on a boat in the ocean and I'm happy. The NCL cruise was so very awesome because it was my first cruise. I was 15, so it would be hard for me to be objective. The ship we were on (the Skyward) was teeny by today's floating palace standards.
My husband surprised the soul out of me with the Royal Caribbean cruise on the Enchantment of the Seas for our twentieth anniversary. It was amazing and awesome and we had a wonderful time, though we didn't have seatmates for our dinner, which was depressing. The service was great and the cruise "culture" a trifle more elegant.
We went on the Carnival Pride with my parents and our son a couple of years later. Carnival's really into the casual cruise thing, but this time we had seatmates for dinner. We tend to find half the fun of a cruise is the assigned seating and getting to know people from different places, and that one was unusually good. Our seatmates were a science teacher and pediatric oncologist (both really young women) and we had the best time with them.
Service tends to be over the top lavish on the cruises that I've been on, and I can't say I necessarily prefer one line over another.
