Next week I'm going to the NAAFA convention at the San Francisco Airport Westin hotel. The Westin hotel sent me a welcome message that included the following:

GODFORBID WE SHOULD TAKE CARNAL PLEASURE IN OUR VIANDS WITHOUT ALSO BEING PROPERLY VIRTUOUS.

And seriously, my sense is that for most people not eating too much meat, eating some fresh stuff, and getting enough complex carbs and protein is enough. Also ENJOYING your food at least sometimes and not feeling guilty about what you eat most of the time.

I don't feel like meals have to be spiritual experiences of joy in the body all the time, though. Sometimes food is just fuel for the next few hours.

The "enough protein" and "not too much meat" things can be in conflict, of course. Splitting it out among mammal meat, bird meat, and fish meat a little more evenly isn't a bad idea. Most Americans don't eat much bug meat, reptile meat, amphibian meat, or gastropod meat -- I've only occasionally had examples of each of them. And they're not bad, but, for the most part, I'm happy to stick to mammal, bird, and fish.

I guess it depends on how you feel about dairy, and how much protein you need. And I know at least one person who's a total carnivore bc she feels like crap if she doesn't eat plenty of meat. There was a period earlier this summer when my appetite was non-existent and all I really wanted was meat - so I ate a lot of meat, mostly chicken.

I'd go for more variety if I could ffs cook meat generally, fish in particular. I just - fail at it. It only ever tastes ok if it's part of a soup.

Um, any suggestions for easy meals involving meat? I think baking is my best bet, I'm wondering if just marinating a chicken breast for awhile and throwing it in the oven would work.

I usually don't plan ahead enough to use marinade but I am fond of putting spices on meat and cooking it in a pan on top of the stove with a drizzle of olive oil, a little soy sauce and a splash of wine. Just as it's finished cooking, green leafies can go in the pan with a little more wine (to deglaze the pan and steam/flashcook the green leafies).

I like beef and lamb better than chicken, but you can do this with chicken, just be careful, if you've got the kind of chicken that has been injected with water, it's more likely to stick.

uh, you put it in the pan and then put the meat right in. It doesn't have time to smoke much unless you like things really well done. I generally do like chicken well done which is why that's a little more difficult for me, but red meat I basically cut thin so that it doesn't have to be in the pan very long before it's heated all the way through.

Under the previous administration, the FTC and FDA pretty much let any major company make whatever therapeutic claims it wanted abut food, under the claim of better consumer information. So the naming party was on.
